Wonderstate pairs meticulous coffee craft with a farmer-centered view of the supply chain. Roasting in Viroqua, Wisconsin, since 2005, it buys directly from growers and exporters, sources most of its coffee through cooperatives, and maintains a guaranteed minimum payment to farmers rather than leaving compensation entirely to the commodity market. Roughly 80 percent of its coffee comes from farms smaller than 12 acres. At the roastery, green samples are evaluated in a cupping lab, coffees rest in climate-controlled storage, and small batches run through a vintage 1930s Probat G-30. The team roasts to order and embraces seasonal availability as part of each coffee’s character. Its environmental choices are similarly concrete. A 96-panel solar array powers the roastery, offices, and production floor, apart from the gas-fired roasters and winter heating. Nearby, its Viroqua cafe occupies a converted 1940s Mobil station and connects coffee to the Driftless region through local craftsmanship and food made with ingredients from area farmers.
