Freshness is Variety Coffee Roasters’ organizing principle. Its menu follows coffee-growing seasons and changes through the year, while the team roasts daily in Brooklyn. That focus gives the brand a clear rhythm: source with the crop calendar, roast close to service, and keep the offering in motion. Variety began on Graham Avenue in Williamsburg in 2008. It brought roasting in-house behind its Bushwick cafe in 2014, then moved production to a standalone East Williamsburg roastery in 2019. Its cafes now sit across Brooklyn, Manhattan, and Queens, rooting the business in New York neighborhoods rather than treating the city as a backdrop. The coffee range balances accessibility with breadth.
