Sightglass builds its identity around visibility: its name comes from the viewing window on a vintage Probat roaster, and its San Francisco flagship turns that idea into a physical experience. The SoMa space brings the production roastery, training lab, open coffee bar, headquarters, and community gathering place under one roof, letting guests watch roasting, preparation, and education in motion. Coffee begins with seasonality. Freshly harvested lots are sourced directly from origin, with attention to processing, variety, altitude, climate, soil, and farm conditions. Small-batch production gives the roasting team room to evaluate each coffee and adjust as it changes over time. The approach treats roasting not as an isolated performance, but as one stage in a chain connecting growers, sourcing partners, baristas, and home brewers. That precision extends beyond the roast date. Coffees are rested for several days after roasting so carbon dioxide can release and flavors can settle; café service is timed around that window. The result is a brand shaped by observation, patience, and an unusually public view of its craft.
