Mostra builds its identity around Philippine coffee and the people who produce it. The San Diego roaster began pursuing direct relationships after its founders’ 2009 volunteer work in the Philippines, shifting their focus from charity toward helping farmers earn fair wages. Since 2015, it has brought specialty-grade Philippine coffee to market and returns a percentage of retail-bag sales to farming communities for infrastructure and educational projects. Seasonal microlots from communities such as Sitio Belis and Sitio Naguey showcase wet, honey, and natural processing; the Heritage release leans toward chocolate, baking spice, and a nutty finish, while the darker Legacy lot suggests fudge, candied walnut, and warm spice. Philippine beans also anchor Ghost Bear, a four-origin espresso blend designed for a smooth, balanced, chocolate-led cup. Across its San Diego cafes, the same point of view extends into culinary-minded drinks: coffee serves as both craft and a vehicle for connection.
