It sources Colombian coffee from producers working in active harvest, then dry-mills the beans at its Bogotá facility, controls export, and flies them to Brooklyn rather than leaving green coffee in extended storage. The fastest lots move from origin to cup in about 10 days, with roasting around day seven. That compressed route shapes both the coffee and the brand’s point of view. Its range balances year-round house blends, assembled from farms harvesting across Colombia, with limited single-estate microlots that foreground specific varieties and processing methods. Hospitality extends the same origin-minded approach. The Williamsburg flagship draws on Colombian farm architecture through a pitched roof, courtyard, woodwork, and dense greenery, while a visible training lab hosts classes, tastings, and cuppings. The result is a roaster that treats logistics, education, and café design as parts of one project: bringing Colombia closer to the cup.
