Broadsheet’s defining trait is range disciplined by obsessive quality control. Its menu runs from extremely light, Nordic-style roasts to medium-dark coffees, with each release assigned a roast degree and one of six flavor families—from floral and elegant to classic and chocolatey. That breadth never becomes looseness: every batch is destoned, color-sorted for post-roast defects, and cupped by the team on each roast day, with time, temperature, and airflow adjusted as coffees evolve. Sourcing follows a similarly split-screen approach. Blend components are selected for sweetness, balance, and body, with priority given to organically grown cooperative lots. The single-origin program embraces washed coffees, naturals, experimental processing, and microlots through long-running sourcing and direct-trade farm relationships. Roasting happens on a recirculating Loring S-35 in Somerville. Minutes away, the Cambridge café turns the same precision toward service, pairing a wide drink selection with pastries baked largely in-house.
