Its sourcing favors durable relationships over score chasing: the team may choose a lower-scoring lot when it offers the foundation for a long-term producer partnership, while combining those collaborations with more traditional buying. Selection is methodical. Samples are roasted lightly, cupped blind, scored with SCA forms, and discussed as a group; the resulting menu balances approachable staples with more unusual, rotating coffees. Roasting extends that logic of precision. A 1937, 23-kilo Gothot uses side-directed hot air, giving the team detailed control over heat application.
